Seasonal Fruit Cobbler

Ingredients

  • 6 cups sliced fresh peaches
  • 3 cups fresh strawberries, sweet cherries or other sweet berries
  • ¾ cup packed brown sugar
  • 2 Tbsp. cornstarch
  • 2 Tbsp. orange juice
  • 1 Tbsp. orange zest
  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 1 Tbsp. baking powder
  • ¼ tsp. salt
  • ½ cup cold butter, cut into ½-inch pieces
  • 1 cup whipping cream
  • ½ tsp. almond extract
     

Preparation

  • Preheat oven to 375 degrees F. Butter a 9 x 12-inch baking dish.
  • Combine the fruit, brown sugar, cornstarch, orange juice and zest. Pour into the prepared dish.
  • Using a food processor or pastry cutter, combine the flour, granulated sugar, baking powder and salt. Cut in the butter until the mixture resembles coarse meal. Add the whipping cream and almond extract. Stir briefly until the mixture is no longer dry and powdery and is just beginning to clump. Spoon over the fruit.
  • Bake for 50 to 60 minutes, until the top is golden and the fruit is bubbly. Serve warm.
  • Serves 12.
