Ingredients

  • Duck confit (shredded)
  • Julienne carrot
  • Julienne celery
  • Julienne cucumber
  • Finely chopped thyme
  • Pureed cranberry sauce
  • Cooked and cooled vermicelli noodles
  • Rice paper spring roll wrappers
  • Luke warm water

 

Preparation

1. In a large bowl soak rice paper spring rolls in lukewarm water until pliable.
2. Lay a small amount of vermicelli, shredded duck cont, carrot, celery, cucumber, finely chopped thyme and cranberry sauce across bottom third of rice paper.
3. Roll lling tucking in sides half way through the rolling process.
4. Cut in half on a diagonal bias.

Serves 4
