Rhubarb Squares

Ingredients

  • 4 tablespoon soft butter
  • 1/2 cup all purpose flour
  • 2 cups plus a bit extra chopped rhubarb
  • 1 cup plus 1 tablespoon white sugar
  • 1/2 teaspoon baking powder
  • pinch salt
  • 2 large eggs
  • 1/2 teaspoon vanilla

Preparation

  • Preheat oven to 350 F.
  • Butter and flour 8” pan.
  • Combine all the rhubarb with 1/3 cup sugar and let stand for 45 minutes. After such time, drain juice away.
  • Sift flour with baking powder and salt.
  • Cream butter and 2/3 cup sugar and then beat in the eggs one at a time.
  • Add vanilla and the flour mixture.
  • Spoon batter into the pan and spoon the drained fruit on top and sprinkle with the remaining 1 T of sugar.
  • Bake until golden and the centre is set.
