Warm Spinach & Strawberry Salad

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons sesame seeds
  • 1 tablespoon poppy seeds
  • 1/4 cup balsamic vinegar
  • 2 tablespoons sugar
  • 1/4 teaspoon sweet paprika
  • Salt and freshly ground pepper, to taste
  • 8 cups loosely packed flat-leafed spinach
  • (about 2 larges bunches), well washed and dried
  • 2 pints strawberries, rinsed, hulled and sliced
  • 1/3 cup thinly sliced scallions, white and green parts

Preparation

  • Heat the oil in a small skillet over medium heat. Add the sesame and poppy seeds and roast, stirring often, until the sesame seeds are golden, about 5 minutes. Transfer to a plate to cool.
  • Whisk the vinegar, sugar, paprika, and the salt and pepper to combine.
  • In a large bowl, preferably a wooden salad bowl, gently toss the spinach with the seeds and oil, strawberries, scallions and vinegar mixture.
  • Serve immediately.
